Darren Doyle, story and photos: The second location of a popular eatery in the community celebrated it's recent opening with a ribbon cutting hosted by the Edmonson County Chamber of Commerce. PJ's Roadhouse in Bee Spring has been open for a few weeks now and locals are talking about the quality of the food served there, which according to co-owner Jackie Snelling, is their top priority. "Quality food, great flavor, and great service is what our focus is," Snelling said. "We will always do our best to provide the very best for a fair price in a great atmosphere." Snelling owns the business with her husband Gary and partners Phillip and Carol Coleman. Jackie and Phillip will manage the business as they do PJ's Cafe in Brownsville.
The location of the new PJ's Roadhouse is on KY HWY 259N, formerly known as Bee Spring Restaurant. They offer a large selection of hot, home cooked meals like catfish, ribeye steak dinners, chicken, pork loin, and a host of burgers and hot sandwiches. Jackie says a second location will allow the business to have a proper expansion. "Our Cafe customers also wanted dinner served, and we tried that, but we didn't really have the room to provide that at our original location. This will allow us to better serve our lunch and dinner customers and let us focus on our popular breakfast items as well as lunch at the other place." PJ's Roadhouse will also offer a candy shop on location in the near future along with what they call "The Outhouse," around back, which is a picnic-type shelter where outdoor dining with karaoke will be offered.
