Wildcat Pizza Basketball Court

Ingredients:
  • canned pizza crust
  • olive oil
  • Italian seasonings (basil, oregano, etc.)
  • sliced black olives or cooked sausage/bacon/ham pieces
  • pepperoni
  • pizza sauce
  • cheddar and mozzarella cheese slices (any variation of cheese will work as long as you have two contrasting colors 
Directions:
1: Stretch pizza dough to fit inside the rectangular pan.
2: Prebake the crust according to recipe directions, then brush with a little olive oil and sprinkle with Italian seasonings.
3: Spread thin layer of pizza sauce
4: Cut slices of cheese into 1/4-inch slices and arrange on top of the sauce to create the planks of the basketball court.
5: Garnish with sliced olives and pepperoni to emulate the court markings. You can use cooked sausage and/or ham pieces in place of olives or combine pieces for your own design. Broil for 2 to 3 minutes until the cheese melts.

Valentine's Day Chicken Parmigiana

​INGREDIENTS:
  • 1 egg, beaten
  • 2 ounces dry bread crumbs
  • 2 skinless, boneless chicken breast halves
  • 3/4 (16 ounce) jar spaghetti sauce
  • 2 ounces shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
​DIRECTIONS:
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
  2. Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
  3. Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.

Apple Fritter Breakfast Casserole

APPLE FRITTER BREAKFAST CASSEROLE INGREDIENTS
  • 2 cans (12.4 oz) Pillsbury Cinnamon Rolls– 
  • 1 can (20 oz) apple pie filling- 
  • 1/2 cup butter, melted
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  1. Preheat the oven to 375. I recommend using a glass or ceramic dish to bake this in, however if you are using a dark non-stick coated metal, you will want to reduce it to 350.
  2. Chop the cinnamon rolls into 6-8 pieces each. You could go even smaller if you want, but a minimum of 6-8 is a good start for bite sized.
  3. Open the can of apples and chop them up into small bite sized pieces.  Open the top of the can all the way up, then run a long sharp knife through the apples inside the can several times to chop them up right inside the can.  As you pour them out later, you can chop any you may have missed as they are added. 
  4. Place the cinnamon rolls, apples, melted butter, sugar and cinnamon in a bowl and mix them until everything in combined and the cinnamon rolls are coated in the apple mixture.  
  5. Spray a large casserole dish with cooking spray. Pour the cinnamon rolls and apples into the dish and use a spatula to make sure it is evenly distributed in the dish. Place in the middle rack of the oven and bake for 40-50 minutes or until cooked through.
  6. ​Drizzle the glaze from the cinnamon rolls over the top of the casserole.  Serve warm and enjoy!
