Iced Mocha

Ingredients
  • ice cubes
  • coffee
  • half & half
  • chocolate syrup
  • whipped cream

​Directions
  1. Fill a glass or mason jar with ice.
  2. Using freshly brewed coffee or leftover coffee, fill the glass about half full.
  3. Add some half & half, depending on how much coffee taste you want.
  4. Add in your desired amount of chocolate syrup.
  5. Stir until combined.
  6. Top with whipped cream and a drizzle of chocolate.

Hawaiian Roll Beef Sliders

Ingredients 
  • 2 tablespoons unsalted butter, divided
  • 2 large sweet onions (such as Vidalia), thinly sliced
  • 1/2 teaspoon kosher salt
  • 2 teaspoons Worcestershire sauce
  • 1 (12-ounce) package Hawaiian sweet dinner rolls
  • 12 thin slices deli roast beef (about 12 ounces)
  • 8 ounces Gruyère cheese, grated
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon finely chopped fresh parsley leaves, for garnish (optional)

Directions
  1. Heat 1 tablespoon of the butter in a large skillet over medium until melted. Add the onions and salt and cook, stirring every 5 to 10 minutes and scraping any browned bits from the bottom of the pan, until soft and deeply browned, about 40 minutes total. Stir in the Worcestershire sauce, again scraping the bottom of the pan. Remove the pan from the heat. Meanwhile, arrange a rack in the middle of the oven and heat to 350°F.
  2. Melt the remaining tablespoon of butter; set aside.
  3. Cut the entire pack of rolls in half horizontally, keeping each half intact and connected. Place the bottom half of the rolls on a baking sheet. Top with the roast beef (about 1 slice per roll). Spread the onions in an even layer over top, then sprinkle evenly with the cheese. Place the top layer of rolls over the cheese. Brush the top of the rolls with the melted butter. Sprinkle with the garlic powder and onion powder.
  4. Cover the baking sheet with aluminum foil and bake for 15 minutes. Uncover and bake until the cheese is melted and the rolls are lightly browned, 5 to 7 minutes more. Let cool for 5 minutes before serving. Sprinkle with the parsley, if desired.

Monterey Chicken

​Ingredients
  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 cup barbecue sauce
  • 1 cup shredded cheese ( This recipe works best with a blend of Monterey Jack and Cheddar cheese.
  • 4 slices bacon cooked and crumbled
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions
Directions
  1. Heat the olive oil in a large oven safe pan over medium high heat. Preheat the oven to 400 degrees.
  2. Season the chicken on both sides with salt and pepper to taste.
  3. Cook the chicken for 4-5 minutes on each side, or until done. Cook time may vary depending on the thickness of your chicken.
  4. Pour the barbecue sauce over the chicken. Sprinkle 1/4 cup cheese over each chicken breast.
  5. Place the pan in the oven for 3-5 minutes, or until cheese is melted.
  6. Sprinkle the bacon, tomatoes and green onions over the chicken and serve.

Fourth Of July Freedom Brownies

​Ingredients
  • 12 tablespoons butter
  • 1 1/2 cups sugar
  • 2/3 cup unsweetened cocoa powder
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup mini chocolate chips
  • 1 cup fresh blueberries
  • 2 cups sliced strawberries
  • 2 (16-ounce) containers white frosting

Instructions
  1. Preheat oven to 350 degrees and line a 9X13-inch pan with aluminum foil. Make sure the foil extends up the sides so that you will be able to lift the brownies out of the pan. Spray with cooking spray.
  2. Melt butter in a medium saucepan. Whisk in sugar and coca powder.
  3. Make sure mixture is not hot and then whisk in eggs and vanilla extract.
  4. Stir in flour, salt, and baking powder.
  5. Fold in chocolate chips. Pour batter into prepared pan. Bake for about 22 to 25 minutes. Let cool completely.
  6. Lift brownie out of pan and place on a serving tray. Spread with a thin layer of frosting.
  7. Arrange blueberries in rows in top left corner. Place strawberry slices in 5 rows.
  8. Place remaining frosting in a large pastry bag fitted with a large star tip. Pipe frosting between rows of strawberries.
  9. Refrigerate until ready to serve.
