Melanie Elmore's Healthy Peanut Butter Cookies

Healthy Peanut Butter Cookies
 
All you need is 3 simple ingredients to make this healthy cookie:
  • 1 cup unsalted natural peanut butter (meaning the only ingredient is peanuts, no other additives)
  • ¼ cup + 1 Tbs maple syrup
  • ½ tsp sea salt (if you like the sweet/salty flavor, you may add little more.  If your peanut butter has salt added, then you may choose not to add any more salt.  Then it’s just 2-ingredients!)
 
Instructions:
1.       Preheat oven to 350 degrees.
2.       Combine all three ingredients.
3.       Drop cookie balls onto a lined baking sheet.
4.       Use a fork to flatten and make the cross pattern.
5.       Bake for 10 minutes.
6.       Let cookies cool completely before removing from the baking sheet.
 
How easy was that?  And you get to eat them and serve them to your family without the guilt and ill effects of sugar!

Shelia Logsdon's Breakfast Muffins

Breakfast Muffins

3 Eggs
8oz. Cream Cheese
6 slices of thick sandwich ham, diced, Kentucky Legend works best, available at Cee Bee Food Store*
1 cup shredded cheddar cheese
2 tablespoons of flour
1 teaspoon of salt
*sausage or bacon can also be added instead or in addition for extra flavor.


In a large mixing bowl, whip eggs and cream cheese.
Add in ham and stir. 
Add cheddar cheese, flour, and salt. Mix well.
Using a greased or cooking spray-coated mini-muffin pan, fill each cup to the top. Bake 15 to 18 minutes at 350 degrees.
Makes about 48 mini muffins.

Karen Renfro's Salisbury Steak

Salisbury steak

2 pounds ground beef
1  average size onion, chopped
1 teaspoon salt
1 teaspoon black pepper
1 egg
1 cup crushed cornflake crumbs
1-1/2 cups flour

1-2 cans your favorite cream soup (I use cream of celery)

Mix your beef, chopped onions, salt, pepper, egg and crushed corn-flake crumbs together and pat out into whatever size you desire (from meatballs to small burger size).

Put your flour in a plate or shallow dish and take each patty and dredge on both sides.

Have a skillet hot with a normal amount of oil and brown your patties on both sides.  Once they are browned, place them in a greased casserole dish.

Mix your cream soup with a little milk or water to thin it out into a pouring consistency and pour over your patties, be sure to spread it over all the patties, cover and bake in a 350 degree oven for 30-40 minutes.

I always fix mashed potatoes with this dish and use the soup as a gravy over the potatoes.
