Breakfast Muffins 3 Eggs 8oz. Cream Cheese 6 slices of thick sandwich ham, diced, Kentucky Legend works best, available at Cee Bee Food Store* 1 cup shredded cheddar cheese 2 tablespoons of flour 1 teaspoon of salt *sausage or bacon can also be added instead or in addition for extra flavor. In a large mixing bowl, whip eggs and cream cheese. Add in ham and stir. Add cheddar cheese, flour, and salt. Mix well. Using a greased or cooking spray-coated mini-muffin pan, fill each cup to the top. Bake 15 to 18 minutes at 350 degrees. Makes about 48 mini muffins.
