Picnic Ready Italian Pinwheels

Ingredients
  • 3 flour tortillas burrito size
  • 1 8 oz pkg salami
  • 30 small Pepperoni slices
  • 9 slices Provolone cheese
  • Romaine lettuce

Pepper Spread:
  • 1 8 oz pkg cream cheese, softened
  • 1/4 cup Italian bread crumbs
  • 1/4 cup parmesan cheese
  • 2/3 cup roasted or sweet red peppers- jarred, chopped small
  • 2/3 cup banana peppers- jarred, chopped small

Directions
  1. Mix all your pepper spread ingredients in bowl until well combined.
  2. Spread 1/3 of the mix onto tortilla.
  3. In center of tortilla place 3 slices of cheese next to one another.
  4. Next layer enough salami to cover tortilla.
  5. After that layer pepperoni covering the salami.
  6. Then lastly add your romaine lettuce on top of that.
  7. Roll up tightly and refrigerate until cool, about 1 hour.
  8. Slice into pinwheels and enjoy!

Meatball Subs

Ingredients 
  • 1 lb ground beef
  • 2 eggs beaten
  • 1/2 cup milk
  • 1/2 cup grated or shredded Parmesan cheese
  • 1 cup Italian bread crumbs
  • 2 cloves garlic minced
  • 1/2 tsp oregano dried
  • 1 tsp salt
  • 1/4 cup chopped fresh basil or 1 TBSP dried basil
You'll also need the following-
  • 5 sub rolls 
  • 2 cups Marinara sauce
  • 10 slices provolone cheese
  • 1 cup Mozzarella cheese shredded
Directions
  1. To make homemade meatballs, first you need to preheat oven to 350 degrees F.  Mix all of the meatball ingredients together. 
  2. Scoop golf ball sized meatballs out using a small cookie scoop. and place on a foil lined baking pan, approximately one inch apart. Bake for 30 minutes.

To assemble Meatball Subs
  1. While the meatballs are in the oven, warm up the marinara sauce on the stove over medium heat.  Place 2-3 slices of provolone cheese on the bottom of each roll, then place 3 baked meatballs on top of the cheese. 
  2.  Top each sandwich with the warm marinara sauce and sprinkle mozzarella cheese and fresh basil on top, if desired. Serve immediately.

Father's Day Maple Candied Bacon

​Ingredients
  • 1 pound thick cut bacon
  • 1/3 cup maple syrup
  • 1/2 cup brown sugar

​Directions
  1. Place the bacon on a wire rack on a foil lined baking pan, brush the top of the bacon with maple syrup and sprinkle on some brown sugar.
  2. Bake in a preheated 400F oven for 15 minutes, flip the bacon, brush with maple syrup and sprinkle on the brown sugar and bake for another 15 minutes or until it reaches the desired level of crispiness.

Option: Sprinkle on some black pepper or cayenne for a bit of heat.

Option: Replace the maple syrup with honey for honey candied bacon.

Pesto Chicken French Bread Pizza

Ingredients
  • 1 tablespoon olive oil
  • 1 medium boneless, skinless chicken breast (about 8 ounces), cut into 1-inch pieces
  • Salt
  • 1 (10-ounce) loaf French bread or baguette
  • 1/3 cup basil pesto
  • 1/2 cup cherry tomatoes, halved, divided
  • 1 cup shredded mozzarella cheese
  • Extra-virgin olive oil and Parmesan cheese shavings, for serving (optional)
Directions
  1. ​Arrange a rack in the middle of the oven and heat to 400°F.
  2. Heat the oil in a large frying pan over medium heat until shimmering. Add the chicken and 2 big pinches of salt. Cook, stirring occasionally, until the chicken is cooked through and starting to turn golden-brown, about 10 minutes. Remove from the heat.
  3. Use a serrated knife to cut the bread in half lengthwise. Place the halves cut-side up on a baking sheet. Spread the pesto on bread. Top with half the tomatoes and half the chicken. Sprinkle evenly with the mozzarella. Top with the remaining tomatoes and chicken.
  4. Bake until the bread is heated through and the cheese is melted, about 10 minutes. Drizzle with olive oil and Parmesan shavings if desired. Cut each half into 2 pieces for serving.
