Strawberry Shortcake "Lasagna" Dessert

INGREDIENTS
  • 4 c. heavy cream
  • 1/2 c. powdered sugar, plus more for dusting
  • 2 tsp. pure vanilla extract
  • 1 1/2 boxes vanilla wafers
  • 1 lb. Strawberries, thinly sliced
DIRECTIONS
  1. In a large bowl using a hand mixer, beat heavy cream, powdered sugar and vanilla until medium peaks form.
  2. Assemble lasagna: In a 9"-x-13” pan, spread a thin layer of whipped cream. Top with a layer of Nilla Wafers and spread a thick layer of whipped cream on top. Top with a layer of strawberries. Repeat two times, ending with strawberries. Sprinkle with crushed Nilla Wafers.
  3. Refrigerate until Nilla Wafers are totally soft, 3 hours, or up to overnight.
  4. Sprinkle with more powdered sugar, then slice and serve.

Memorial Day American Flag Cake

​Ingredients
  • 1 box yellow cake mix
  • 1 cup water
  • 1 cup oil
  • 3 eggs
  • 2 1/2 cups powdered sugar
  • 2 tablespoons water
  • 1 teaspoon light corn syrup
  • 1 tablespoon soft butter
  • 1/2 teaspoon vanilla extract
  • 1 pint fresh strawberries, washed and dried
  • 1/2 cup fresh blueberries, washed and dried

Container: 9 x 12 baking pan

Directions
  • Mix cake mix with water, oil, and eggs according to package directions. Pour batter into a 9" x 13" baking pan.
  • Bake in a 350° F. oven for approximately 30 minutes or until the cake pulls away from the edges and a toothpick inserted into the center comes out clean.
  • Cool on a wire rack for five minutes. Remove cake from pan and allow to cool completely.
  • For frosting: mix powdered sugar, water, corn syrup, vanilla, and butter together until thick and creamy. When cake is cool, frost the entire cake with the frosting.
  • Slice strawberries in half length wise and allow them to drain on a paper towels while you arrange the blueberries. Lay the fruit out on the cake into a flag pattern as shown.

Mother's Day Apple Fritter Donuts

Ingredients:
Two large apples
Pancake mix
Caramel sauce
Powdered sugar
Cinnamon sugar

Directions:
1. Cut apple into round, horizontal slices (thin)
2. Punch out center with cookie cutter or small scoop to make a donut shape
3. Blot apple slices dry, drizzle with caramel sauce
4. Mix one cup of pancake mix according to box instructions
5. Fully coat apple slices in pancake mix
6. Deep fry in hot oil until golden brown
7. Sprinkle fritter with your choice of powdered sugar or cinnamon sugar
8. Let cool and serve to Mom on a tray with a flower along with hot coffee, juice, or milk.

Edible Cookie Dough

Ingredients:
3/4 c melted butter
1 1/4 c brown sugar
1/4 c white sugar
1/4 c milk
1 tbsp vanilla extract
2 cups & 2 tbsp flour
1 cup of chocolate chips

Directions:
Mix melted butter, brown and white sugar in large bowl
Add milk & vanilla
Slowly add flour and stir
Add chocolate chips

You can enjoy immediately or chill for a couple of hours for a cool treat.
