Holiday Salted Caramel Chocolate Chip Cookies

Ingredients
  • 1 roll (16.5 oz)  refrigerated chocolate chip cookies 
  • 1/3 cup all-purpose flour
  • 1/2 cup finely chopped pecans
  • 24 caramels, unwrapped (from 14-oz bag) 
  • 2 tablespoons half-and-half
  • 1/3 cup semisweet chocolate chips, melted
  • 1 teaspoon coarse sea salt

Steps
  1. Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in flour until well blended. Shape tablespoonfuls of dough into balls; roll in pecans, pressing into dough. Place 1 inch apart on ungreased cookie sheets.
  2. Bake 12 to 16 minutes or until edges are light golden brown. Using handle of wooden spoon, make indentation in center of each cookie. Cool 1 minute; remove from cookie sheet to cooling racks. Cool completely, about 20 minutes.
  3. Meanwhile, in microwavable bowl, microwave caramels and half-and-half uncovered on High 1 to 2 minutes, stirring once, until caramels are melted. Spoon about 1 teaspoon caramel into indentation of each cookie. Cool 15 minutes.
  4. Drizzle with melted chocolate; sprinkle with salt. Let stand about 15 minutes or until chocolate is set. Just in time for the holiday season!

Name:  Charley Mize
Instructions:  I bake it and my mom put it in her oven.  My daddy he check it.  Daddy take it out and gets out the bones.  Dad gives half the turkey to the animals.  Go shop get more turkey.  We eat that one.  My throat hurts momma makes hot coco. 

Name: Emily Prewitt          
Instructions: Get a turkey from the store.  Maybe the store can cook it. 

Name: Jeremy Minton           
Instructions:  Get it from the farm.  You have to tame it so it can be your pet.  Put it in a skillet on the stove for 14 minutes.

Instructions: First, you find one.  Then you cook it in the oven.  My dad knows how many minutes.

Instructions: Get the turkey from Wal Mart.  Cook on the stove for 4 minutes.  Put salt on it.

Instructions:  You get it from Wal Mart.  Cook it in the stove for a minute or so.  Cook it on 6 and put it on a bun.

Bentley Blanton
You go hunting to get the turkey. When you get home you cook the turkey on a big stove. It has to really hot sometimes. Cook the turkey for like four hours then eat it.

First you go to Walmart to get your turkey. Then I cook it on a grill over at my Mamaw and Papaw’s. The grill has to be extra hot to cook the turkey because the turkey is really cold. Cook it about twenty minutes or so. After you cook it let it cool down for a little bit then we eat it.

First you buy your turkey at Walmart. Then you take it to Mammaw’s and cook it for 10 hours in the oven. When the oven beeps it is done. Then you eat it!

Well we get in the woods and you shoot the turkey.  You could shoot it with a gun or a bow--either one. Um so you pull the feathers off and then you clean it and then you put it in the oven.  You put salt on it while you are cooking it. You probably cook it for 10 hours or 8 hours. When it comes out of the oven, its ready to eat.  You can put ketchup on it and that would taste good.

Well, my dad actually kills it.  He has a rifle, and me and my dad have been practicing.  I have been shooting right, and I even shot through the bottle cap.  Anyway, he has these little red things that puts in the turkey. I think it’s called a juicer.  We really have to cook it--I don’t know if it’s in the oven or what. We actually take off the legs.  We save those to have some food for tomorrow. But we slice the body to eat. We actually just eat it, we don’t really put anything on it.

I don’t cook turkeys because Nana she cooks it for us, and I don’t cook it.  If I did cook it I’d cook it like a regular ham. I’d put salt on it and uh, what’s it called?  Pepper. I’d freeze it in the fridgerator’, then I’d cook it in the oven and the microwave. You get it out of the oven at 10:30.  I’m gonna bring it to Nana’s (you can just say Kim, that’s alright). When I bring it to Nana’s my Nana and Papa will eat it.

Before you cook it you need to stuff it with chicken.
Cook the turkey in the oven at 1,000 degrees for  1 minute.
The turkey is done when it is 1:30!
You can eat more chicken with the turkey.
For dessert you can eat donuts.

Brandon:
Get a turkey in the woods.  Bring it home and put ketchup on it.  Put it in the oven for 10 hours.

Donavan:

First, go to the wild and get a turkey. You will need a rope and your arms. Tie the rope in a loop on top of a branch. Use your arms to pull the rope so it catches the turkey’s leg. Before you cook it you need to stuff it with ham and hot sauce. Put some butter on top of the turkey to make it nice and greasy. Cook the turkey in the oven at 15 degrees for about 20 minutes. The turkey is done when the 20 minute timer goes off! You can eat ham, beans, and mashed potatoes with the turkey. For dessert you can eat cupcakes with leaf rings on top.

WWII Seasoned Baked Potato Wedges

​​​Check out this Veterans Day recipe for potatoes served on WWII battleships: quick, easy, but very tasty!

  • 6 large potatoes, peeled and quartered lengthwise
  • 1 cup butter, divided, or more as needed
  • 2 cups Kentucky Colonel Seasoned Flour

  1. ​Place the potato wedges in a bowl of water, and refrigerate for at least 1 hour.
  2. Preheat oven to 450 degrees. Spray a baking sheet with cooking spray. Melt 1/2 cup of butter in a small saucepan over low heat; pour it into a shallow dish. Place flour in a second shallow dish. Roll potato wedges in the seasoned flour, then dip into the butter. Arrange potato wedges on the baking sheet. Melt and add more butter for dipping as you go along (the flour makes it thick).
  3. ​Bake the wedges in the preheated oven until tender and golden brown, 35 to 40 minutes.

Chicken Pot Pie

Ingredients

For the filling:
  • 6 Tbsp unsalted butter softened
  • 1/4 cup all-purpose flour
  • 1 Tbsp cornstarch
  • 1/2 cup milk
  • A small onion finely chopped
  • A medium carrot peeled and diced
  • 1 celery stalk diced
  • 1 cup condensed chicken broth or 1 cup water plus 2 chicken bouillon cubes
  • 1/2 medium size russet potato peeled and diced
  • 2 medium size baked chicken breasts diced (link to the recipe is in the post)
  • 1/2 cup frozen peas
  • Salt to taste
  • Freshly ground black pepper to taste

For the pie pastry:
  • 2 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 1 cup 227 g cold unsalted butter, cut into cubes
  • 1/4 cup ice water
  • 1 Tbsp white vinegar
  • 1 egg yolk plus 2 tsp milk mixed well, for brushing
Instructions
  1. To prepare the filling, combine 4 tablespoons of the softened butter with the flour in small bowl. Set aside.
  2. In a separate bowl, dissolve the cornstarch in the milk. Set aside.
  3. In a large saucepan, add two tablespoons of butter and saute the onion, carrot, and celery over medium-high heat for about 3 minutes.
  4. Add the broth and the potatoes, and bring to a boil. Cover and simmer for about 10 minutes or until the vegetables are just tender.
  5. Add the butter and flour mix and bring to a gentle boil, constantly stirring.
  6. Pour in the milk and cornstarch mixture and bring to a boil. Add salt and pepper to taste. Stir in the chicken and peas. Cover and let cool.
  7. To prepare the pie dough, in a food processor, combine the flour and salt. Add the butter and pulse a few times until the butter is the size of peas. Add the water and vinegar and pulse a few more times. It does not need to come to a ball. It will look like a big pile of crumbs, and that's what you want. 
  8. Remove the dough from the food processor and place on a large piece of Saran wrap. Twist the plastic to tighten the dough into a ball. Cut into two pieces, and flatten each piece into a disk. Cover with a plastic wrap and refrigerate for 1 hour. 
  9. Alternatively, twist the plastic wrap on both ends, as if you were wrapping a candy.
  10. Cut the dough into 8 disks. This will make 4 smaller chicken pot pies that can be baked in ramekens.
  11. ​Preheat the oven to 400F.
  12. On a lightly floured work surface, roll out the two dough discs into two circles, one about 13 inches in diameter and the other about 10 inches in diameter. With a sharp knife, make a few slits in the second (10 inch) dough circle. Line a 9-inch pie dish with the larger dough circle. The dough should overhang the dish by about 1/2 inches.
  13. If making smaller pot pies in 4 ramekins, roll out 4 disks into 8"-9" circles and 4 disks into 5"-6" circles respectively.
  14. Spoon the chicken filling into the baking dish, or ramekins. 
  15. Cover with the second sheet of dough. Crimp the edges and tuck them in. Brush the top with egg yolk wash. If making single portion pot pies in ramekens, repeat the process four times.
  16. ​Bake on the rack positioned in the middle of the oven for about 50 minutes or until the pastry is golden brown. Let rest for 15 minutes before serving.
